How to make Sheera(Sheera)

Semolina roasted golden in ghee, then drawn out with hot sweet milk into a soft, spoonable pudding scented with cardamom and saffron. Sheera is the looser, milkier sibling of suji halwa — comfort measured in spoonfuls.

Ingredients
  • ·150 g fine semolina (suji)
  • ·5 tbsp ghee
  • ·500 ml full-fat milk, hot
  • ·150 ml water, hot
  • ·120 g sugar
  • ·4 green cardamoms, seeds ground
  • ·1 pinch saffron threads, bloomed in warm milk (optional)
  • ·10-12 raisins and a handful of slivered almonds

  • The roast is the flavour — pale semolina makes paste, not sheera.
  • Keep it looser than feels right; it thickens noticeably as it stands.
Method

    Melt the ghee in a heavy pan, add the raisins and almonds, and lift them out once the raisins swell.

    Add the semolina to the same ghee and roast on low-medium heat, stirring constantly, until golden and nutty, 8-10 minutes.

    Dissolve the sugar in the hot milk and water.

    Pour the sweet milk into the semolina in a stream, stirring — it will sputter and seize, then loosen.

    Cook on low, stirring, until the semolina swells and the sheera turns soft and pourable, 5-6 minutes.

    Fold in the cardamom, saffron and the fried raisins and nuts, and serve warm.
